Zakhiah Carroll, MS, RD, LD

Zakhiah Carroll serves as an associated faculty member for the Department of Human Sciences and Design. Professor Carroll graduated from Texas Tech University in 2019 with a bachelor's degree in Nutrition Sciences and Dietetics. She then completed a combined MS and Dietetic Internship (completed May 2020) through Baylor University and graduated with a Master's in Nutrition Sciences and Dietetics in May 2021. During her time at Baylor, she assisted in various research projects within the HSD department. Additionally, she sat for her board exam and became a registered and licensed dietitian (RD/LD) in early June of 2020.
Professor Carroll currently serves as an associated faculty member, as well as a lead registered dietitian in the DFW area. Her primary area of clinical expertise is in geriatric nutrition, as well as diabetes, dialysis, and wound treatment/management.
