Amber Arnold, MS, RDN, LD
Clinical Assistant Professor of Nutrition Sciences Didactic Program Director, Dietetics
Amber Arnold serves as Clinical Assistant Professor and Director of the Didactic Program in Dietetics. Professor Arnold completed her MS and supervised practice from Stephen F. Austin State University in 2005. She is a Registered and Licensed Dietitian and a member of the Academy of Nutrition and Dietetics.
Professor Arnold practiced Medical Nutrition Therapy in numerous clinical and outpatient settings, including hospitals, skilled nursing facilities, group homes, community health clinics, and private practice. Amber has been an adjunct lecturer since 2010 and joined Baylor as a full-time faculty member in the Fall of 2020. She is the faculty advisor for Nutrition Outreach Waco and a member of the Interprofessional Education Committee at Baylor.
