Senior Lecturer in Nutrition Sciences Program Coordinator for Nutrition Sciences
Professor Wilfong serves as Senior Lecturer and Program Coordinator of the Nutrition Sciences Program in the Department of Human Sciences and Design. Professor Wilfong graduated from Texas Tech University in 1991 with a BS in Nutrition and Dietetics. He subsequently completed a Dietetic Internship (1992) and MS from Texas Tech as well (1993). He's a Registered Dietitian Nutritionist (RDN), Licensed Dietitian, and a Fellow of the Academy of Nutrition and Dietetics.
Professor Wilfong has over 20 years of experience working as an RDN in the healthcare industry. During that time, he served as a Clinical Dietitian, Regional Dietitian, and Divisional Dietitian with various acute, subacute, and extended-care facilities, working in both clinical nutrition and food service administration. He was responsible for overseeing Nutrition Service departments and training food service managers and RDNs in nearly 200 facilities in 13 states throughout his career.
